Zucchini Quiche (Shortcut: Can be made night before & served at Room Tempature)
Preheat oven to 375 degrees.
You will need:
Approx. 3 cups thinly sliced zucchini, 1 medium onion chopped, 2 tbsp butter, 1 tbsp parsley, 1/4 tsp garlic, 1/4 tsp oregano, 1/4 tsp basil, salt & pepper to taste. 3 eggs well beaten, 8 oz. shredded mozzarella cheese, One can refrigerated crescent rolls, 2 tsp yellow mustard. Cherry tomatoes (optional for garnish).
Separate crescent roll triangles press over bottom & sides of ungreased pie pan to form crust. Spread mustard over crust.
In skillet on medium high heat add butter and cook zucchini & onion until tender, stir in seasoning. Cool slightly. In large bowl combine shredded mozzarella cheese & eggs. Combine zucchini mixture with eggs & cheese. Immediately pour over crust. Slice 2 cherry tomatoes in half & put in center of quiche flat side down for garnish.
Bake approx. 18-20 minutes, cool 10 minutes before serving.
Add your favorite breakfast sausage, muffins and fresh fruit (Short cut: I like to put a bunch of green & red grapes in a bowl).
